Today Estlin has been full of gratitude. :-) This morning he asked me if I was going to make breakfast and when I said yes, he replied, "That's so sweet, Mommy!" Then later in the car, he randomly said, "Mommy, I had a good weekend at Grammy's. Thank you!" Then he asked Olivia, "Sister, do you love me?" When she said yes, he said, "Give me a hug and kiss!"
I think I can contribute it to the fact that he slept in this morning. 6:20. Hallelujah!
Earlier, I was feeling uninspired to come up with my weekly menu. I think this was because I usually do it on Sunday nights and last night I was just too tired from our weekend. So I asked my friends for some help and they came through. Of course. It's funny, though, just reading their recipes got me inspired and I came up with my own menu that didn't involve many of their offers. :-) But I included them for next week's menu. So here goes, in case anyone is interested. Two weeks worth of menus. (5 day weeks, b/c I usually wing it on the weekends).
Monday: Turkey breasts stuffed with panko bread crumbs, mushrooms, prov. cheese (Jeremy makes this. YUM)
broccoli
possibly mashed potatoes
Tuesday: Chicken meatballs w/ spaghetti and homemade sauce
Wednesday: Vegetable curry w/ rice and grilled naan
Thursday: Pupusas (bean and cheese)
Guacamole
Friday: My friend Laura's lentil and brown rice soup
Next Monday: Greek chicken pita wraps with cucumber/dill yogurt sauce
My friend Missy's greek potatoes
Tuesday: Asian Vegetable Dumpling Soup
Wednesday: My friend Laura's ground turkey/white bean/olive pasta
Thursday: Missy's French Onion Soup
Friday: Steak and Cheese sammies (if J will let me get away with red meat) :-)
Oh, and one more thing: this weekend Leah and I were talking and she said that even if she had the password to my e-mail she wouldn't snoop because "it'd probably just be a bunch of recipes". Well, pbbbbbbbbbttttttttt on you, Leah Muse. I am wild and exciting. Yes, I am. There is WAY more than just recipes in my inbox, I'll have you know. WAY more. Now don't you wish you could snoop?
Happy Monday, lovelies.
i want to snoop SO BAD
ReplyDelete"missy's" greek potato recipe is actually my thea ostranee's recipe. she is one of my greek aunts in california. there is a running compettion between my aunts on who makes the best dishes. thea voula's is probably the tzatziki recipe for your pitas if that also came from missy. love to see the old greek ladies spread their culinary wisdom via internet. :-)
ReplyDeletethe tzatziki recipe is just the one i've been using forever...probably got it out of a magazine. :-) i love that i am using your thea ostranne's recipe. those potatoes are sooo yummy.
ReplyDeleteoops ostranee. :-)
ReplyDeleteYum! Can I come for dinner??
ReplyDeleteJen,
ReplyDeleteOf course!!!
don't worry about the spelling. i used to think her name was ostrich when i was a kid. i remember watching fantasia and seeing the ostriches dance and thinking it was my aunt. :-)
ReplyDeleteACTUALLY, Tina Roberts...the recipe for the Greek potatoes is an ADAPTED Food Network recipe...I didn't have the actual recipe from your Aunt..I usually wing it. Rob, the Greek potato recipe is the one you got off recipe swap right? Sorry to disappoint anyone. ;) Tina, if you have an actual recipe you might wanna pass it along to Robin. It's prob. more authentic than the one she's using. ;);) So funny.
ReplyDeleteFor the record...the french onion soup isn't "Missy's" recipe either. I borrowed it from an everyday food magazine. It's tasty though. Made it last night. :)
ReplyDeleteWHATEVER!!! I got it from you, therefore I will refer to it as "Missy's". Case closed, peeps!
ReplyDeleteJust trying to give credit where credit is due, ya know. Case officially closed. ;)
ReplyDeleteBy the way, LOVED how sweet Estlin was being..."Give me a hug and kiss!" I'm in love w/ that little guy. :)
